January Decor!

Once the Christmas tree is taken down and put back in storage, and the rest of the yuletide decorations are put away the house can take on an empty feel. TGIF!

It’s Friday!!  We’re all exhausted and nobody wants to cook. So here’s one of my go-to dinner recipes.
Pre-made pizza crust
Pesto sauce from a jar
Tomatoes
Mozzarella (fresh is best)
Seasonings to taste (oregano, basil, salt and pepper)
Throw the crust in the oven (use temperature on crust package) to warm a few minutes. Spread pesto on top, sprinkle with oregano and garlic salt. Spread thinly sliced tomato slices, top with cheese. Let bake until top is lightly browned.

It’s SO easy and delicious. I add lots of basil when that’s in season. Feel free to add other toppings as you so desire but recognize the simplicity is part of what makes it so yummy!

Easy & Delicious Beef Stew Recipe!

1 pound beef for stew, cut into 1-inch pieces

3 tablespoons all-purpose flour
2 tablespoons olive oil
2 cloves garlic, minced
1 3/4 cups Beef Broth or Beef Stock
2 medium onions, cut into quarters
1 bay leaf
1/2 teaspoon dried thyme leaves, crushed
1/4 teaspoon ground black pepper
2 cups whole baby carrots
2 medium potatoes, cut into 2-inch pieces
1/4 cup water
1.Season the beef as desired. Coat with 1 tablespoon flour. Heat the oil in a 6-quart saucepot over medium-high heat. Add the beef and cook until it's well browned, stirring often. Add the garlic to the saucepot and cook and stir for 1 minute.

2.Stir the broth, onions, bay leaf, thyme and black pepper in the saucepot and heat to a boil. Reduce the heat to low. Cover and cook for 1 1/2 hours.

3.Add the carrots and potatoes to the saucepot. Cover and cook for 30 minutes or until the beef is fork-tender and the vegetables are tender. Remove and discard the bay leaf.

4.Stir the remaining flour and water in a small bowl until the mixture is smooth. Stir the flour mixture in the saucepot. Increase the heat to medium. Cook and stir until the mixture boils and thickens.

Pretty With Pine!

•Gather your supplies. You'll need a fun lantern, a few wildflowers or grocery store daisies, pine branches from your yard, clippers, and a ring of Oasis floral foam.


•Soak your floral foam in water.

•While your Oasis is soaking, clip pieces from your pine branches. Make each branch about six inches long, but vary the length a bit to keep the wildlife look.

•Poke your pine branches into top and sides of the Oasis. Place them about an inch apart at first and fill in after you've created a good base.

•Add fun, brightly colored flowers like Gerbera daisies toward the inside of your Oasis ring.

•Fill in blank areas in the Oasis with more pine branches and with bits of reindeer moss.

•Add a lantern to the center for a fun, campout look. A checkered tableclock completes the look
 

Reuben Dip!

Ingredients



1/2 cup mayonnaise

1/2 cup Thousand Island dressing

16 ounces sauerkraut, rinsed and squeezed dry

8 ounces shredded corned beef

16 ounces shredded Swiss cheese


Directions


1.Preheat oven to 350 degrees F (175 degrees C).
2.In a small bowl, combine mayonnaise and dressing.
3.Spread sauerkraut into a 9x13-inch baking dish. Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.

4.Bake for 20 to 25 minutes.
